If it helps to keep everything clear, you can use the \setromanfont command instead of \setmainfont, although the fontspec manual doesn't mention it:

\usepackage{fontspec}
\setromanfont{Latin Modern Roman}
\setsansfont{Latin Modern Sans}
\renewcommand{\familydefault}{\sfdefault}

\begin{document}
  abc
  \textrm{abc}
